In food, it acts as thickener, stabilizer and emulsifier—controlling ice cream crystals, improving noodle stickiness.
In pharmaceuticals, it serves as excipient: tablet binder, suspension thickener, hemostatic. With good biocompatibility, it shows promise in tissue engineering and wound healing.
